Tuna Muffins with Cheese and Dorito chips

Introduction

I have adapted this recipe from a south african tuna tart. The doritos and cheese gives it a unique flavour. I have used a white, spicy cheese in this recipe but mature cheddar will just work fine.
Please adapt the nutritional info if using cheddar or other cheese to get the correct nutritional information.
