Quickest Ever chili

Introduction

Adapted from Cdn Diabetic cookbook, using beef instead of tofu. Adapted from Cdn Diabetic cookbook, using beef instead of tofu.
Number of Servings: 6

Ingredients

    2 stalkes celery
    0.5 onion chopped
    0.5 green bell pepper
    0.5 cup chicken broth
    1 can diced tomatos
    1 can black beans drained
    1 lb. lean ground beef OR 1 block tofu (calorie count uses beef not the tofu).
    pepper and chili powder to taste

Directions

Brown beef OR tofu in pan with onion and peppers
Drain if any moisture at all
Add chicken broth, tomatos, beans and spices and cook about 15 more minutes.

Can serve over shredded lettuce. 1 cup is one serving.

Serving Size: Makes 4-1 cup servings.
