Ingredients

1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
1/2 cup brown sugar, firmly packed
1/8 tsp salt
1 tsp baking soda
2 tablespoons flaxseed meal (optional)
2 cups very ripe, mashed peaches (mash before measuring)
1 egg, slightly beaten
2 tablespoons butter, melted
1/2 cup raisins or nuts (optional)
Tips
The resting time is important - don't skip it!
Directions
In a bowl, stir together dry ingredients. In a separate large bowl, mix mashed peaches, egg, and melted butter. Stir in raisins and/or nuts. Stir in flour mixture until well-combined. Pour into a 9x5" greased loaf pan. LET REST 20 MINUTES. Bake at 350 for 45-55 minutes - bread is done when knife inserted into center comes out clean. Cool bread in pan 15 minutes; remove from pan and finish cooling on wire rack. Store covered to retain moistness.
