Quinoa with veggies

    1/2 cup *Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry,
    2 cups cubed Zucchini,
    1 Yellow Peppers (bell peppers), 1 pepper, chopped
    Red Ripe Tomatoes, 1 cup, chopped
    Broccoli, cooked, .5 cup, chopped
    Canned Tomatoes, .5 can drained
    Goat Cheese, Semisoft, 2 oz
    Parmesan Cheese, grated, 2 tbsp


I use no sodium tomatoes so the sodium totals should be adjusted downward.


Cook 1/2 cup quinoa in 1 cup water for 10 minutes and set aside.
Saute chopped veggies then add tomatoes with a little of the juice as desired.
Put quinoa on plates and top with 1 oz goat cheese, veggies and parmesan cheese.

Serving Size: makes 2 servings
