Pollo Empanizado

Introduction

Thin Chicken breast, breaded and pan fried. Serve it with salsa, lime juice, and salad. Thin Chicken breast, breaded and pan fried. Serve it with salsa, lime juice, and salad.

Ingredients

    1 lb chicken breast, sliced thin (1/4") and then flattened
    1 cup bread crumbs
    3 eggs
    1/4 cup milk

    1/2 cup canola oil

Tips

Serve with homemade salsa, lime wedge, and salad.


Directions

1. Trim the chicken. Slice into 6 thin steaks. Set aside on a plate.
2. Mix eggs and milk in a bowl.
3. Place breadcrumbs on a wide plate or in a gallon sized resealable plastic bag
4. Dip a chicken fillet in the egg mixture then in the breadcrumbs. Repeat with remaining chicken.
5. Heat canola oil in a skillet.
6. Fry chicken in skillet, turning once after 2-3 minutes.
7. Place chicken steaks on a paper towel lined plate to remove excess oil.


Serving Size: Makes 4 4-oz servings
