Introduction

Grapefruit are spiced with ginger, cinnamon, chilli and indian spices to create a chutney. It can be used as a fruity and spicy dip for your snacks or condiment for curries. Number of Servings: 40

Ingredients

    30 ml olive oil
    1 small onion, grated, 100 g
    2.5 ml red chilli flakes
    150 ml sugar (10 tbspn)
    150 ml white or cider vinegar (10 tbspn)
    Cumin seed, .25 tsp
    Coriander seed, .25 tsp
    cardomom, 5 pods
    Cinnamon, ground, .25 tsp
    Ginger, ground, .25 ml
    Grapefruit, 2 fruit, peeled, chopped, white skins removed
    salt and milled black pepper to taste

Directions

1) Heat the oil and add the onion and grapefruit.
2) SautÚ until soft.
3) Add the chilli, sugar, salt, pepper, spices and vinegar.
4) Bring to boilingpoint, then reduce the heat to low.
5) Simmer for about 15 minutes on low or until the liquid has reduced and thickened.
6)Remove cardomom pods from chutney.
7) Cool and refrigerate.
