Peanut Butter Cookies

Introduction

Number of Servings: 28

Ingredients

    3/4 cup Smucker's All Natural Creamy Peanut Butter
    1/2 cup plain, fat-free yogurt
    3 TBSP egg whites (= 1 egg)
    1 TBSP vanilla extract
    3 TBSP fat free milk
    1 cup packed light brown sugar
    3/4 tsp salt
    3/4 tsp baking soda
    2 cups unbleached white flour

Tips

If you don't like them this soft, go with the original recipe which uses a whole egg & shortening, not yogurt. You will have to adjust the nutritional values accordingly.


Directions

Combine peanut butter, yogurt, egg whites, vanilla & milk in a bowl and mix until smooth. Add in brown sugar and continue mixing until smooth again. Mix in salt, baking soda and flour until all ingredients are mixed well.

Using a small melon scoop, scoop the dough onto either baking stones or well greased pans - they should come out as 1 inch balls. Using a floured fork, press down each cookie lightly, until partially flat & a lined pattern is formed.

Bake at 375 degrees for 9 minutes or until just done. Allow to cool on the pan for a few minutes, until they cookies won't break on transferring to a cooling rack.

Best if stored in the refrigerator, because cookies should remain soft.

Serving Size: Makes about 60 1" cookies. Serving size is 2 cookies.
