Nanna Lynne's Famous Chocolate Pudding Cup Suprise

Introduction

Who says you can't have chocolate for breakfast. Try this family favorite for that special (or not so special day) day. Who says you can't have chocolate for breakfast. Try this family favorite for that special (or not so special day) day.
Number of Servings: 8

Ingredients

    8 prepared crepes

    4 oz reduced-fat cream cheese,
    (cut into small squares)

    1cup fat-free milk (may substitute soy milk)

    1 pkg (4 serving size)
    sugar-free instant chocolate pudding mix

    1 can Healthy Way All Natural Canola Cooking Spray

    3 cups fresh strawberries


Directions

Preheat oven to 400 degrees F.
While oven is heating, invert eight 6-ounce custard cups on a baking sheet.
Lay a crepe on top of each cup.
Spray oil on each cup, while counting one 1,000, two 1,000, and stopping at three 1,000.
For best results be certain to coat each crepe with cooking spray.
Bake for 20 minutes. Turn of oven, and let crepes stand in oven for 30 minutes, or until crisp.
Carefully, lift crepes from custard cups, and place on a rack to cool.
In a food processor or blender, combine cream cheese, milk, and pudding mix.
Mix until smooth and creamy.
To serve, place each crepe cup , right side up, on a pretty desert plate.
Spoon a layer of strawberries in to the bottom of each crepe cup.
Divide pudding into cups, add a tablespoon of Cool Whip Lite to the top of each pudding cup, then place a strawberry on the top of each crepe cup.
