Jan's Homemade Chicken Noodle Soup

Introduction

My family calls this "Sick Soup". One of us makes it whenever anyone is sick. It's easily digested and tastes great. My family calls this "Sick Soup". One of us makes it whenever anyone is sick. It's easily digested and tastes great.
Number of Servings: 12

Ingredients

    Water, tap, 8 cups
    Chicken Boullion, Knorr Brand, 8 tsp
    Chicken, fryer, meat only, stewed, 4 cups
    fettuccine, Barilla, 8 oz
    Celery, raw, 1 cup, diced (remove)
    Baby Carrots, raw, 6 medium (remove)

Tips

If your like me and can't let that wonderful broth from the chicken go to waste. You can use it in place of some of the water. Remember, there is fat in the broth.


Directions

Prepare chicken by pressure cooking or boiling. Cool. Remove excess fat, gristle and bones. Cut up into bite size pieces.


Heat 8 cups of water in stew pot. Bring to a boil. Add Chicken Boullion crystals, stir well. Stir in vegetables. Return to a boil. Break fettuccini noodles in half or thirds. Stir noodles into pot. Cook for 12 minutes,at a boil . Add in chicken to pot. continue cooking for a minute or so til chicken is hot.

Serving Size: serves about 12
