Cauliflower "Arroz" Con Pollo

Number of Servings: 4

Ingredients

    1 tbl olive oil
    2-2.5 lbs chicken thighs, skin removed
    1 onion, sliced
    2 garlic cloves, minced
    1 red bell pepper, sliced
    1 14.5 oz can chopped tomatoes in juice
    1 head cauliflower, grated
    1 cup broth
    1/2 tsp saffron threads
    1/2 tsp salt
    1/2 tsp hot hungarian paprika
    1 tsp cumin
    1 cup frozen peas

Directions

Heat oil in a deep saucepan, add chicken and brown on both sides. Remove to plate and set aside.
Add onions, peppers, and garlic to pan, and saute until tender. Add seasonings, tomatoes, broth and cauliflower. Bring to a boil, and simmer covered 15-20 minutes until cauliflower is tender. If there is too much liquid, remove lid and simmer until reduced. Add frozen peas and cook 2-3 more minutes.
