Iggy's Figgy Jam

Introduction

My fig tree, Iggy, sets lot's of figs every year, but they tend to ripen all at once. I find the best thing to do with a surplus is to make a simple jam. This is very fast, quite delicious and is just lovely with a small slice of Manchego cheese My fig tree, Iggy, sets lot's of figs every year, but they tend to ripen all at once. Number of Servings: 10

Ingredients

    Figs, fresh, 4 medium (2-1/4" dia)
    Granulated Sugar, .25 cup
    Lime Juice, .5 lime yields
    Raspberries, 6 raspberries
    Salt, 1 dash
    Water, tap, 2 cups

Directions

Cover the figs with boiling water and let sit for 10 minutes.
Drain and remove stems.
Chop into 1/4 " pcs, then combine with raspberries, sugar and water in a heavy bottomed sauce pan. Bring to a a simmer and cook until reduced. Add lime juice and dash of salt, simmer another minute or two and you are done. This makes a realtively small amount, so I just put it into a small canning jar and store in the fridge.

Serving Size: Should yeild about 10 2 tbl servings
