4 strips bacon, diced
1 small onion, diced
2-6 cloves garlic, diced
1/2 small can roasted green chilis
2 ears of corn, kernels cut off
2 cups mexican 4-cheese blend
10 6-8" flour tortillas
serving sides (optional):
i layer ingredients: tortilla, cheese, filling, cheese, tortilla. this seems to help everything stay together.
cover with a lid while cooking, it helps the cheese melt. if they quesadillas aren't browning turn the heat up a little.
finally, let them rest for a couple of minutes before cutting. they are less likely to fall apart if the cheese sets a bit.

in a non-stick skillet or griddle put down a tortilla, add cheese and corn filling, top with another tortilla, cook until golden (about 3-5 min), flip, and cook until golden and cheese has melted.
