Introduction

Number of Servings: 6

Ingredients

    6 skinless boneless chicken breasts
    1/2 cup roasted red pepper salad dressing
    1 large onion chopped
    1 large green pepper chopped
    1 large red pepper chopped
    3 stalks of celery chopped
    1/2lb. mushrooms sliced
    1 can tomatoes ( can used stewed if preferred)
    1 cup minutes rice ( white or brown)
    1 cup water
    1 tbls garlic or to taste
    1 tbls oregeno or to taste
    1 tsp pepper
    1 tbls Italian spice or to taste
    2 cups grated cheese of choice.

Directions

In a large skillet over medium heat, pour in salad dressing (using like cooking oil) and cook chicken until cooked through. Remove chicken from pan and set aside. Sauted the chopped vegetables until tender. Pour in canned tomatoes, rice, water and spices. Stir until well blended. Place chicken on top of rice and veggie mix. Cover and cook until rice is cooked. Cover with shredded and cheese and cover until cheese is melted. Serve while hot.

Serving Size: makes 6 servings, 1breast per serviing
