Chicken Cacciatore

Introduction

Number of Servings: 8

Ingredients

    1/4 c. olive oil
    3 lbs. chicken (2 thighs, 2 drumsticks, 2 breasts)
    1 clove garlic, minced
    1/2 medium onion, chopped
    1 tsp. oregano
    2 Tbsp. parsley
    1/2 tsp. salt
    1/4 tsp. pepper
    1 large can (28 oz.) crushed tomatoes
    1 can (8 oz.) tomato sauce
    1/2 c. white wine

Directions

In an electric skillet, set to 350 degrees and heat olive oil for 1 minute.

Remove skin, wash and dry chicken pieces with a paper towel. Add chicken to heated olive oil and brown for 5-10 minutes on each side. Remove and place on a dish.

Brown garlic and onion in olive oil. Place chicken back into skillet. Sprinkle with oregano, parsley, salt and pepper. Pour crushed tomatoes and tomato sauce on top to cover chicken. Cover skillet with lid, reduce heat to low, and simmer for 45 minutes.

Remove lid and add white wine. Simmer uncovered for 15 minutes.

Serve with your favorite pasta!
