A tough roast was the spark to create this delicious, versatile filling for a great, healthy sandwich. Your sodium level will vary with the type of roast you use (deli, or roast you cook with or without salt.)
3 ounces or 85 grams cooked roast (leftovers work very well and you control the sodium)
6 cloves of roasted garlic
1/2 large tomato or a whole roma tomato
1 slice Jarlsberg light cheese (1 ounce or 30 grams)
1 Joseph's Flax, Oat Bran & Whole Wheat Flour Pita
For lunch at work or on a picnic, pack up the crumble mix in a container. Spread the pita with the garlic and place in a Ziploc bag with the cheese. Pack in your lunch sack with a plastic knife of spoon.
If you'd like a hot sandwich, warm the assembled flatbread in a toaster oven, regular oven until cheese is melted. This happens pretty fast so stay with it the first time, especially in a toaster oven.
You can microwave, but use 50% power or less so you don't get rubbery bread.
The crumbles become the basis for another recipe that is used as a dip or spread: Sue's Garlic Beef Dip and Spread
Smash the remaining 3 roasted garlic cloves and spread on half of the pita bread.
Arrange the beef/tomato/garlic crumbles on the garlic spread. Place the slice of Jarlsberg cheese on the beef. Fold the pita bread over the top and enjoy.
