A dense breakfast muffin filled with nutrition, but milk free. Great when you are on the run!
1 C Oatmeal
1 C Wholegrain Rye Flour
1/2 C Brown Sugar, packed
1 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cinnamon
1/2 C Reconstituted Raisins
1 large Egg
2 Tbs Salad Oil (Soy or Canola)
1 C Yogurt (I use Dannon Light & Fit Vanilla Yogurt)
1/4 C Almond Milk (I use Blue Diamond Vanilla)
Add dates, coconut, dried fruit, nuts, or wheat germ for extra goodness. Substitute applesauce for yogurt when needed.
Serving Size: Makes 12 regular size muffins
