Amazingly Easy Guacamole

Ingredients

    1 medium tomato, diced and drain off excess liquid
    2 medium avacados, peel, seeded, mashed
    1 tbsp. lemon juice
    1 1/4 tsp. salt
    1/2 small onion, minced
    1 small garlic clove, minced
    1-4 oz. can chopped mild green chilies

Directions

In a bowl, combine everything and use a mix master to blend to consistency that you like.

** Chilies can be hard to find.... I get Old El Paso chilies in the section where the taco stuff is. I drain off some of the juice and add the whole can.
I make mine in a food processor. If you have one, it makes it super easy... quarter the onion and add it to the processor bowl. Cut up the tomato and take out the seeds from inside and throw it into the bowl . Chop up the onion and tomato until it's pretty small, then add everything else and process until it's smooth.
Not sure if you know anything about avacadoes, but a ripe one is soft and dark green. (I made the mistake of buying unripened ones before... doesn't make for very smooth guacamole!! lol). Oh, when you store it, put plastic wrap on the surface, otherwise it turns brownish. Give it a stir before serving, too.

  • Yummy! I used red onion in mine and saved one of the pits from my avacodo to store in the guacamole, that also helps keep it green. I use guacamole as a replacement to mayonnaise on a sandwich and it's delicious! - 8/25/12
