Roasted Veges

Ingredients

    4 Beets halved and quartered
    1 large onion cut in wedges
    2 C zuchinni cut in large pieces
    4 carrots cut in large pieces
    5 Tomatoes quartered
    2 Tbsp dried Rosemary
    2 Tbsp dried Basil
    1 Tbsp hot pepper flakes (to taste)
    1 Tbsp Mrs. Dash Salt substitute
    1/4 C evoo
    Juice of 1 lemon

Tips

Use more or less evoo according to taste. Other veges may be substituted as available.


Directions

Cut all veges into a bowl. Wisk evoo, spices and lemon juice together, toss with veges. Place in foiled lined pan and roast for 25 minutes at 450 degrees then 10 minutes more under the broiler.
