Ingredients

    2 cups shredded or cubed egg plant
    1 5.75oz jar sliced green salad olives w/pimento
    2 tbsp extra virgin olive oil

Tips

The more whole grain the bread the more filling this will be.


Directions

peel and shred or cube the egg plant, saute in the olive oil till mostly cooked, then add the drained sliced olives and cook till warm. Serve on bread with melted swiss cheese over the top
