IntroductionI made this for a community garden party...and didn't have any to take home! Obviously delicious! I made this for a community garden party...and didn't have any to take home! Obviously delicious!
6-7 large potatoes (about 2.5-3 lbs)
3-4 stalks celery, diced
1/4 cup diced broccoli
1/4 cup diced onion
6 oz plain greek yogurt
3-4 T light miracle whip
3-4 t dijon mustard
2 T pickle relish
Next time I make this, I plan to add grated carrots as well. I think lots of veggies would go really well with this otherwise basic potato salad!
2. While potatoes are boiling, chop veggies into bite-size pieces and mix together dressing ingredients.
3. Once potatoes are done, drain and rinse under cold running water. Combine all ingredients. Leave in fridge for at least 2 hours before serving for best results.
Serving Size: Makes 8 servings of about 1/2 cup each
