Sweet, red-ripe tomatoes are spiced with ginger, cinnamon, cumin and chilli to create a chutney. It can be used as a fruity and spicy dip for your snacks or condiment for curries.

Ingredients

    30 ml olive oil
    1 small onion, finely chopped
    150g tomatoes peeled and cut into 1 cm dices
    1tspn (5ml) ginger powder
    2 ml red chilli flakes
    5 tbspn (75 ml) sugar
    5 tbspn (75 ml) white or cider vinegar
    salt and milled black pepper to taste
    0.5 tspn (5ml)cumin powder
    0.1 tspn (1ml) cinnamon

Directions

1) Heat the oil and add the onion and tomatoes.
2) SautÚ until soft.
3) Add the spices, sugar and vinegar.
4) Bring to boilingpoint for 4 minutes, then reduce the heat to low.
5) Simmer for about 15 minutes on low or until the liquid has reduced and thickened.
6) Cool and refrigerate.
