Tuna with a Twist

Introduction

A lady friend of mine used to make a cooked tuna dish using a tin of tuna in water and served it with rice. I re-created her recipe and added thai spices for a bit of a twist. Ingredients

    Tuna, Canned in Water, 160 grams, flaked
    Onions, raw, 60 grams, chopped
    Carrots, raw, 60 grams, grated
    Green Peppers (bell peppers), 0.75 cup, strips
    Flour, whole grain, 0.15 cup
    0.05 tspn of baking powder
    water, 1 cup
    Thai 7 Spices, 1 teaspoon
    Balsmic vinegar, 1 Tbspn
    Chutney, tomato, 1 tablespoon
    Olive Oil, 1 Tspn
    salt and pepper to taste

Tips

Serves with rice (info not included in nutritional information).


Directions

1. Saute the onions and peppers in the olive oil till cooked.
2. Add the chutney, balsamic vinegar and spices and cook for 2 mminutes
3. Add the grated carrots, tuna and water and simmer for 20 minutes or untill the carrots are cooked.
4. Mix the flour, baking soda in a bit of water till a paste form. Add paste to tuna mixture and stir till the sauce thickens.

Serving Size: Makes 2 servings
