Low Carb Quiche

Introduction

A tasty low carb quiche that keeps well in the fridge. Make it on the weekend and enjoy it for breakfast all week! A tasty low carb quiche that keeps well in the fridge. Make it on the weekend and enjoy it for breakfast all week!
Number of Servings: 9

Ingredients

    one medium zucchini (shredded)
    6 brussel sprouts (Fresh - shredded)
    3 small sweet bell peppers (sliced thin)
    2 chicken breasts, cooked and cubed
    3 lg. egg
    1 cup egg substitute
    3 tbsp. salsa
    100grams Cheddar cheese (shredded)

Tips

Can add sour cream or additional salsa on top if desired.


Directions

Preheat oven to 350 degrees, lightly spray a 9 X 13 pan with olive oil/pam... whatever you prefer.

Combine all vegetables, mix well, drain excess liquid, put aside

In a seperate bowl, combine egg white and eggs and beat until all mixed. Add vegtables, mix until all vegetables are thoroughly coated. Sprinkle on cheese and keep mixing so it doesn't clump.

Pour into greased pan and cook at 350 for approx. 30 minutes.

Remove from oven and enjoy! :)
