Introduction

Quick dinner that kids like and is great to bring to work the next day for lunch. Quick dinner that kids like and is great to bring to work the next day for lunch.
Number of Servings: 5

Ingredients

    1 lb Chicken breast
    1 package Soba Noodles
    1 package of Mann's Rainbow Salad
    1 small onion
    1 small red, yellow or orange bell pepper
    1/2 cup pea pods
    1 tbsp sesame oil
    3 cloves garlic
    3 tsp ginger
    1 cup or less chicken broth/stock no salt added
    4 tbsp Soy Sauce, low sodium

    Optional topper:
    1 tbsp Black Sesame seeds
    3-4 Spring (green) onions

Tips

Optional add black sesame seeds and spring onions as a topper.
You can also add Asian hot sauce if you like it spicy.
Chineese 5 spice can also be added.


Directions

1. Cook chicken first either in the oven or stirfry with only spray oil
2. Add 1tsp of sesame oil to pan on medium high heat. Add garlic (fine chop) and fresh garlic grated. Cook only 1-2 mins. as to not over cook the garlic.
3. Meanwhile boil soba noodles according to package directions.
4. Add the Rainbow Salad, chopped onion and pepper to the oil, garlic and ginger. Cook about 3 mins.
5. Add pea pods cook additonal minute.
6. Drain off and add Soba noodles to the veggies.
7. Add soy sauce to the noodle and veggie mixture.
8. Add chicken (either chopped or shreadded) and chicken stock as needed.


Serving Size: Makes 4 servings
