Parisienne Sauce for Chicken or Pork

Introduction

This is a great sauce with a sweet and spicy (but not hot) flavor. The original provided enough for 12 portions but I rarely cook for that large a crowd, so I've cut it down for 4. Ingredients

    4 oz. current jelly
    1 t. cornstarch
    1/4 c. cold water
    1 T. lemon juice
    2 t. Worcestershire Sauce
    1/2 t. ground allspice
    1/4 t. salt
    1/3 t. ground black pepper

Tips

This is great with rice and a good green veg, like broccoli. I've never grilled with it, but I bet it would work there as well, like a barbecue sauce.


Directions

In a small saucepan over medium heat, melt jelly with the lemon juice, worcestershire and spices. In a small bowl, mix cornstarch with water and stir until smooth. When sauce in pan is hot and jelly is melted, stir in cornstarch mixture and bring just to a boil, stirring as sauce thickens.

Originally, the recipe called for the chicken or pork to be baked in the sauce. I have also cooked it all on the stove, browning the meat first then pouring the sauce over it and simmering until cooked through. You can cut the meat into smaller pieces first to get dinner in a hurry.
