Semisweetchick's Healthy Ground Turkey Chili

Introduction

This is a different, unusual chili that doesn't use much chili powder but does incorporate New Mexico chopped green chile (chili peppers). Very tomatoey. Number of Servings: 12

Ingredients

    2 Tbl canola oil
    1.25 lb lean ground turkey
    0.75 cup chopped bell pepper (green)
    0.75 cup chopped bell pepper (red)
    0.75 cup chopped bell pepper (yellow or orange)
    1 cup chopped onion
    0.5 cup chopped green chile (frozen style, thawed, medium or hot depending on your taste)
    1 15-oz can EACH pinto, red kidney, and black beans, drained and rinsed
    1 14-oz can canned, diced, fire-roasted tomatoes
    1 6-oz can tomato paste
    1 8-oz can tomato sauce
    2-3 cups water (depending on how thick you want it)
    3 Tbl chili powder
    2 tsp salt or to taste

Tips

Adjust the amount of water and seasonings to your taste. This recipe makes a large batch and freezes very well.


Directions

1. Begin heating canola oil over medium-high heat.
2. Add ground turkey and cook until no longer pink.
3. Add combined bell peppers, onion, and green chile and cook until peppers wilt or onions become translucent.
4. Add remaining ingredients and simmer until heated through.
5. Ladle into a bowl and enjoy! Suggested toppings: low-fat sour cream, reduced fat shredded cheese, raw chopped onion.

Serving Size: Makes about 12 servings of 1.5 cup each
