Lite Potato Salad

Introduction

Number of Servings: 4

Ingredients

    6 small-medium potatoes peeled and diced
    1 rib celery diced
    2-3 dill pickles diced (can use sweet as well)

    Dressing

    1/4 C fat free plain Greek yogurt
    1 T lite or fat free mayo
    2 tsp yellow or dijon mustard
    1 T dried dill weed
    1 T onion powder
    pinch salt to taste (can leave it out)
    ground pepper to taste

Tips


Directions

Boil the potatoes just until tender, do not overcook, cool
Add potatoes, celery and pickles to a large bowl

Whisk the dressing ingredients together then combine with potatoes, celery and pickles

Refrigerate at least an hour

Serving Size: Makes 4 1/2 C servings
