Light Cheese Sauce

Introduction

Uses Cabot 50% and 1% milk. Uses Cabot 50% and 1% milk.
Number of Servings: 13

Ingredients

    3 T Smart Balance Light Spread
    3 T white flour
    3/4 cup milk 1%
    4 oz Cabot Vermont 50% Light Cheddar, grated

Directions

Grate the cheese and set aside.

Make a bechamel sauce by melting smart balance in sauce pan over medium high heat. Add flour. Stirring continuously, when it becomes frothy and bubbly or it rapidly returns to cover the bottom of the pot, add milk gradually and stir until it starts to get pretty thick. Add cheese and stir until melted.

Serve over broccoli or cauliflower or use as a base for homeade macaroni and cheese.

Makes about 13 servings of 2 tablespoons each.
