Easy Vegetable Curry

Introduction

My girlfriend is vegetarian so we are always trying to come up with simple meals that go a long way. My girlfriend is vegetarian so we are always trying to come up with simple meals that go a long way.
Number of Servings: 4

Ingredients

    1 Potato peeled and diced
    1 large Carrot peeled
    1 Zucchini
    1/2 Large Red Onion
    1/2-1 tsp Curry Powder or more to taste
    1/2 tsp Ground Turmeric
    salt/pepper to taste
    1/3-1/2 Cup Water

Directions

Steam Potatoes, peel and cut the carrot into thin slices and add to steamer. Cut the Zucchiniinto sticks and add to steamer until ALL are tender. Slice and saute the Onion in a skillet, add the veggies and water then the spices simmer on low for a few minutes taste and season. If it seems dry add a LITTLE water to it.
