Jen's Potato Leek Soup

Introduction

Low sodium version Low sodium version
Number of Servings: 8

Ingredients

    4 potatoes
    2 leeks
    2 cups low sodium vegetable broth
    1 cup milk
    1 tsp black pepper
    1 T canola oil
    a pinch of salt

Directions

Heat oil in skillet.
Chop leeks and add to dutch oven or heavy skillet. Saute until they are shiny.
Chop potatoes and add to leeks.
Add vegetable broth. Cook potatoes and leeks until tender.
Remove from heat. Let cool for a few minutes.
Add mixture to blender and blend until smooth.
Mixture will be thick. Return to pot. Add milk and water to desired thickness and heat through.
Add seasonings to taste.
