Spicy Black Beans

Introduction

Delicious sugar free, gluten free, dairy free starch! Delicious sugar free, gluten free, dairy free starch!
Number of Servings: 4

Ingredients

    1/4 cup vegetable broth
    1/2 cup onion
    2 garlic cloves, minced
    2 14.5-oz cans of petite diced tomatoes, drained
    2 tbsp canned chopped green chilies
    2 15-oz cans black beans, rinsed and drained
    1 tbsp chopped cilantro or parsley
    1/2 tsp cumin
    1/2 tsp ground red pepper
    1/4 tsp chili powder

Directions

Makes 4 servings! 1 cup of black beans is a serving.

*Serve as a starch.

-Heat vegetable broth in non-stick skilled over medium heat.
-Add chopped onion and garlic, saute in broth until tender.
-Add tomatoes and chilies.
-Reduce heat and cook, uncovered, 6-8 minutes until mixture thickens.
-Stir in beans and remaining ingredients.
-Cover and cook 5 minutes.
