Mini Low Carb Cheesecake Muffins

Introduction

Great for a sweet dessert fix. Like cheesecake without the crust. Great for a sweet dessert fix. Like cheesecake without the crust.
Number of Servings: 12

Ingredients

    2 large eggs
    2 8oz packages or cream cheese
    1/2 cup splenda
    1 tbsp vanilla extract or any flavouring you wish to add!


Tips

Top with a spray of cool whip if you like!


Directions

Blend all ingredients in a mixer until smooth
Divid into 12 muffin papers in a muffin pan. They will be full about half way. Place in 325 degree oven. Check at 15 min until they look set.
