Whole wheat Zucchini Muffin (by THEBOOGIESMAMA)

    3 Eggs
    1 Cup Granulated Sugar
    2 3/4 Cups shredded Zucchini
    3 tsp Vanilla extract
    1.5 Cups Whole wheat flour
    1.5 Cup All purpose flour
    2 tsp cinnamon
    2 tsp baking powder
    1 tsp baking soda


Whisk eggs and sugar until light and fluffy. Add zucchini and vanilla extract.

Add whole wheat flour, all purpose flour, cinnamon, baking powder, baking soda in separate bowl and mix.

Mix dry ingredients with wet until combined.

Mix well. Spoon into muffin pan. Spray pans with cooking spray and bake in over for 15-20 minutes at 350 (F) or 162 (C)Should make 24 muffins.
