Ingredients

    1 cup cooked brown rice
    1 egg
    1/4 tsp salt
    1 cup tomato sauce
    1 cup cooked peppers and onions
    2 oz chicken, turkey, beef, or sausage
    1/4 tsp oregano
    1/4 tsp basil
    1/4 tsp red pepper flakes
    1/4 tsp salt
    1/4 tsp pepper

Directions

-Preheat oven to 350 degrees.
-Mix rice, egg, and salt.
-Spray glass pie dish with nonstick cooking spray.
-Pour rice mixture into bowl and bake for 10 minutes, until firm and browned.
-Top with tomato sauce, cooked veggies, protein, and spices.
-Bake for another 10 to 15 minutes.
