Glenn's Baked Chicken Penne

Introduction

Number of Servings: 6

Ingredients

    1 box of whole wheat penne
    1 large can crushed tomatoes
    3 cans diced tomatoes
    1 can tomato sauce
    1/4 cup chianti wine
    1 tbsp olive oil
    3 cloves garlic, minced
    1 tbsp fresh basil, chopped fine
    1 tbsp oregano, fresh chopped fine
    6 chicken breasts, grilled
    1 pkg sliced provolone
    1 container of shredded romano cheese



Directions

Saute garlic and seasonings in stock pot. Add all cans of tomatoes, chianti. Bring to a boil, and let liquid boil off. Simmer for 15-20 min. Meanwhile, grill chicken, and cook penne according to package directions. (We seasoned chicken with dried oregano). When chicken is done, cut into pieces and add to sauce. Layer pasta in 9x13 pan, with cheeses. Bake for 20-30 minutes at 350.

Feel free to adjust seasoning's to your tastes. I know he added some other seasonings that aren't listed here. Tip - Use rosemary and garlic blend seasoning - ground fine with mortar and pestle. Lightly coat chicken with olive oil, then coat with seasoning and grill. He says it was an important detail in the flavor!
