    Sugar, 1.7 cup
    Zucchini, 2 cup, grated
    Flour, white, 3 cup
    Salt, 1 tsp
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Pineapple, canned, 1 cup, crushed,

Directions

beat eggs, add sugar and vanilla, then oil, Zucchini, and mix well. add flour, baking powder, baking soda, salt and mix. Bake at 350 for 1 hour.

Serving Size: makes 12 cupcakes or 2 small loaves of bread
