Have some fun with this reciepe! Go to an Italian deli and buy the real cheeses! Use some different varieties until you get a mix you like. This is a to die for treat that eaten in small amounts with a large salad will not blow your diet! It freezes well to take for lunches that others will envy!
chop an saute till done the mushrooms, onions, an succinni. In a large mixing bowl combine the thawed drained spinach an the cooked veggies. Mix in the ricotta cheese an garlic, then the raw eggs. Reserving 2 cups of the shredded cheese for the top mix in the remaining 8 cups and the parmesan cheese. Layer in a rectangular baking pan starting with noodles an ending with noodles. Put in a 400 degree oven for 30 minutes or until bubbly, remove an top with the remaining cheese an put back in the oven for another 20 to 30 minutes. Watch the cheese so it doesn't burn.
