Vanilla Cherry Granola

Ingredients

    7 Cups Old Fashion Oats
    1/2 cup walnuts, roughly chopped
    1/2 cup pecans, roughly chopped
    3 egg whites
    3/4 tsp. salt
    1 tbsp. vanilla extract
    1 cup dried cherries
    5 packets stevia (2 1/2 tsp.)

Directions

Preheat oven to 300 degrees

Line a baking sheet with parchment paper

In a large mixing bowl, add oats, walnuts and pecans. Mix together.

In a small bowl add egg whites and salt. Whisk together until frothy. Add vanilla extract. Mix until combined.

Pour egg mixture over oat mixture until everything is incorporated. Add 2 tsp. stevia and mix well.

Evenly spread the oat mixture to the baking sheet and gently press down. Lightly sprinkle the top of the oats with 1/2 tsp. stevia.

Bake in oven for 35 minutes. Add dried cherries and flip granola. Cook for 15 minutes more. Turn oven off and leave oven door open and leave granola in oven until crispy, about 20 more minutes. Let the granola cool before storing.
