Strawberry Coconut Granola (by SHELBSYD)

Ingredients

7 Cups Old Fashion Oats
1/2 cup walnuts, roughly chopped
1/2 cup unsweetened coconut, dried, shredded
2 egg whites
1/2 tsp. salt
1 tbsp. vanilla extract
1 cup dried strawberries
4 packets stevia (2 tsp.)

Directions
Preheat oven to 300 degrees
Line a baking sheet with parchment paper
In a large mixing bowl, add oats, walnuts and coconut. Mix together.
In a small bowl add egg whites and salt. Whisk together until foamy. Add vanilla extract. Mix until combined. Add coconut oil and stevia and whisk until evenly combined.
Pour egg mixture over oat mixture until everything is incorporated. Add 2 tsp. stevia and mix well.
Pour egg mixture over oats and mix until all the oats are covered with mixture.
Evenly spread the oat mixture to the baking sheet.
Bake in oven for 35 minutes. Add dried strawberries and flip granola. Cook for 15 minutes more. Turn oven off and leave oven door open and leave granola in oven until lightly crispy, about 20 more minutes. Take granola out of the oven and let it cool completely before storing in an airtight container.
