Thai Shrimp Soup with Lime

Ingredients

1 tbl olive oil
3 tbls minced fresh ginger
1 small onion, thinly sliced
5 cups low sodium chicken broth
1/2 tsp red pepper flakes
3 cups napa cabbage, thinkly sliced
1.5 pounds uncooked, peeled, deveined shrimp
2 tsps grated lime zest
1/4 cup fresh lime juice
Directions
Makes 7 (1 1/2 cup) servings, or 4 (2 1/4 cup servings).
Heat oil in large suacepan over medium heat. Add ginger and onion; cook, stirring often, until fragrant. Add broth and red pepper flakes. Increase heat and bring to a low boil.
Add cabbage and cook for 2 minutes. Add shrimp, lime zest and lime juice. Cook until shrimp turn pink. Serve hot.
