Cat's chopped egg salad

Ingredients

8 extra large hardboiled eggs
1 long celery stalk, diced
1/4 large onion, diced
1 TB dill pickle relish
2 tsp yellow mustard
5 TB mayo with olive oil
Salt, to taste
Black pepper, ground to taste
Tips
Directions
Boil eggs and chop eggs
Dice celery and onion
Add 1 TB pickle relish to taste
Add 2 tsp yellow mustard to taste
Add 5 TB mayo with olive oil
Add salt and pepper to taste
Stir together ingredients until creamy and mixed well
Chill
Serve on whole wheat bread and garnish with lettuce and tomato.
Serving Size: Makes 4 generous sandwiches
