Introduction

Number of Servings: 1

Ingredients

    -Better 'n' Eggs (or similar)- .5 cup
    -Tomato, chopped- 2 ounces
    -Fresh spinach, chopped- 1 ounce
    -President Fat-Free crumbled feta (or similar)- 1 ounce
    -Nonstick cooking spray
    -Basil to taste (optional)

Directions

1. Coat a small frying pan with nonstick cooking spray. Allow pan to warm.
2. Add in spinach and tomato. Cook over medium-low heat until tender (time varies, depending on how small you cut up your veggies). Drain any excess water.
3. Add Better 'n' Eggs, then basil, and finally crumbled feta over spinach and tomato.
4. Cook over medium-low heat for approximately five minutes, or until egg-substitute is cooked thoroughly. To prevent sticking, stir continuously.
