Introduction

I made this soup one night when I was in hurry and also had some zucchini and spinach about to go bad in my fridge. Its filling,tastes good and is only about 105 calories! Warning, soup will be green! my kids told me all kinds of unappetizing things that it looked like. I made this soup one night when I was in hurry and also had some zucchini and spinach about to go bad in my fridge. Its filling,tastes good and is only about 105 calories! Warning, soup will be green! my kids told me all kinds of unappetizing things that it looked like.

Ingredients

    12 oz Chicken breasts chopped into bite sized pieces
    1 cup spinach
    1 can (13.5 oz) coconut milk
    1 medium onion thinly sliced wedges
    2 large baby zucchini largely chopped
    2 cups vegetable broth
    2 tsp curry power or 1 tsp garam masala and 1tsp turmeric
    1 tsp chili powder
    2 tsp salt
    3 cloves garlic minced
    2 Tbsp butter

Directions

melt butter on medium to med high heat in 4 quart soup pot. add onions and garlic, do not let burn! add curry and chili powders and stir. add chicken and zuchini cook, stirring often for about 8 min till almost cooked. In blender place spinach and coconut milk. blend well. add vegetable broth and spinach to pot stir well and let simmer for 12 - 15 min. enjoy.
