my husband is allergic to eggs, so I found this recipe and tweaked it a little with splenda and light syrup. Ingredients



    *Whole Wheat Flour, 0.75 cup
    Baking Soda, 0.5 tsp
    Salt, 0.25 tsp
    Cinnamon, ground, 0.5 tsp
    Brown Sugar, 0.5 cup, packed
    *Splenda Sugar Blend for Baking, 0.25 cup
    *light maple syrup, 2 tbsp
    Unsweetened Apple Sauce, 0.25 cup
    *Canola Oil, 0.25 cup
    Vanilla Extract, 0.5 tsp
    Rolled oats 1.5 cup, dry
    Raisins, 0.5 cup, packed
    Almonds, 0.25 cup, ground

Tips

I've made this with a mashed ripe banana instead of applesauce before and they came out awesome too!


Directions

preheat oven to 350*

Mix flour, baking soda, salt and cinnamon in a small bowl.
In another bowl mix sugars, syrup, apple sauce, oil, vanilla until thoroughly blended. Add flour mixture and stir. Stir in oats, then raisins and nuts.

Drop by teaspoon full onto a non-stick cooking sheet, bake 13-16 minutes depending on size, pan, oven, and elevation.

Serving Size: makes 18 larger cookies, or about 36 small ones
