Mojito Fruit Salad

Introduction

Ingredients

    Pineapple, fresh, 2 cup, diced
    Kiwi Fruit, 2 fruit without skin, medium
    Blueberries, fresh, 1 cup
    Mangos, 1 fruit without refuse
    Banana - 1 large
    Spearmint, 10 leaves
    Lime Juice from 3 limes
    Apples, fresh, 1 large
    1 cup turbinado sugar (optional)

Directions

Soak the mint leaves in the lime juice for half an hour.
Remove the mint leaves, chop, and set aside.
Chop up all of the fruit and put into a large bowl - make sure all of the fruit is chilled (except the banana, of course).
Add the chopped mint to the lime-mint juice, then pour into the fruit bowl and stir making sure to coat all of the fruit.
Chill or serve quickly.

Makes 8 one-cup servings

Option: To make this more indulgant, make a simple syrup. Mix one cup of sugar and one cup of filtered water and bring to a boil. Remove from heat, add mint leaves, and allow to steep for half-an-hour, then remove and chop mint leaves. When all of the fruit is in the bowl, pour in the syrup and coat, then add the lime juice and mint.
This adds nearly double the calories, but the taste is truly an aphrodisiac.
