Quinoa Oatmeal Pancakes

Introduction

High in fiber and protein, low in sodium. High in fiber and protein, low in sodium.
Number of Servings: 4

Ingredients

    1 cup dry quinoa
    1 1/2 cups old fashioned oatmeal
    1/4 cup wheat germ
    1/2 cup egg substitute
    1/4 cup milk (I used Hazelnut "milk")
    1/2 tsp salt
    1 tsp cinnamon
    2 cups water - for quinoa.
    2 cups water for batter.

Directions

Rinse quinoa well, then cook in two cups water.

Or -- Rinse quinoa, then soak overnight in two cups water.

Put all ingredients in blender and blend until smooth.

Cook on lightly oiled pan or griddle.

Makes approximately 4 servings.

1/2 cup batter = ~10 small, thick pancakes.

I would try maybe 1/3 cup batter for less thick pancakes.
