Nona's Mediterranean Salad

Introduction

A great dinner or lunch salad. The longer it chills in the fridge the better it tastes. A great dinner or lunch salad. The longer it chills in the fridge the better it tastes.
Number of Servings: 6

Ingredients

    1 12 oz jar marrinated artichoke hearts
    1 15 oz can chick peas
    1 6 oz can pitted ripe black olives
    1/2 red onion
    1/4 cuo extra virgin olive oil
    1/4 cup white balsamic vinegar
    1 tsp Italian seasonings
    3 cloves garlic

Tips

I serve this over thinnly sliced tomatos and cucumbers. Don't add these to the blow. They will get soggy. For a dinner salad, I put a piece of poached salmon or tuna on top.


Directions

Drain the artichoke hearts and olives then add to bowl. Drain and rinse chick peas and add to bowl. Slice red onion thinnly and add to bowl. Put olive oil, vinegar, garlic and seasonings in a blender and blend. Pour dressing over salad, cover and place in refrigerator for an hour. The longer it chills the better.
