Eggplant zucchini saute

Introduction

When you have eggplant and zucchini from the garden, this is a delicious veggie dish to have anytime. When you have eggplant and zucchini from the garden, this is a delicious veggie dish to have anytime.
Number of Servings: 6

Ingredients

    1 eggplant
    1 zucchini
    1 medium onion
    3 medium tomatoes
    basil, oregano, salt and pepper to taste
    1 tbls. olive oil

Directions

Chop eggplant, zucchini, onion and tomato into sized pieces of your choice. Coat sauté pan with 1tablespoon of olive oil. I spray with Pam first, then add oil. Saute eggplant, zucchini and onion and herbs for a few minutes. Add tomatoes, salt and pepper to taste and cover. Cook for about 20 min. Less if crispier veggies are wanted.
