Baked Peaches

Introduction

Ingredients

    3 large Peaches, fresh, peeled & chopped
    Honey, 2 tbsp
    1 Tbsp. Coconut Flour, 1 tbsp
    2 Tbsp. Coconut Oil, 2 tbsp
    2 Tbsp. Ghee, 6 tsp
    1 - 1 1/2 tsp. vanilla extract
    1/2 tsp. almond extract (optional)
    Spices (Adjust to taste):
    : 1/4 - 1/2 tsp. cinnamon
    1/8 tsp. cardamon
    1/4 tsp. ginger
    1/8 tsp. nutmeg (if not using cardamon)

Tips

Serve warm - with Greek yogurt (add vanilla & sweetener) or homemade vanilla ice cream.

Directions

Preheat oven to 350 degrees.
Mix fruit, ghee, coconut oil, and honey; stir well. Stir in coconut flour.
Pour into oven-safe casserole (1 qt is large enough).
Bake 45-50 minutes, until bubbly.
Top with chopped macadamia nuts (1 cup) for a crispy topping
