1 C diced potato (any type will do, skin on)
1 chicken apple sausage - diced
3/4 C onion diced
1/2 C Red pepper-diced
1/2 C Yellow pepper-diced
3/4 C diced zuchini
1 tsp. Mrs. Dash seasoning
Red pepper flakes to taste
1 tsp Basil (or use fresh!)
1 tsp onion powder
1 tsp garlic powder
salt and pepper to taste
Serve with fresh fruit for a quick skillet breakfast. Any veges can be used, Jicama is fun for a change up. Adding tomatoes at the very end also livens things up especially if you can get them in summer fresh from the garden!
Begin with the onions, cook for 2-3 minutes, add potatoes and cook additional 3-5 minutes, stirring often. Add sausage, cook 3-5 minutes then add peppers and zuchini the last 3 minutes.
